Shepherd's Pie
Half-batch beef and vegetable filling with a mashed sweet potato topping.
Ingredients
Filling
- 1 lb lean beef
- 1 cup carrots
- 1 cup peas
- 1 cup green beans
- ½ cup pumpkin
- ½ cup broth
Topping
- 2 sweet potatoes
- 1 tbsp Greek yogurt
Instructions
- Prepare the filling and spread in a baking dish.
- Mash the sweet potatoes with the Greek yogurt and layer on top.
- Bake 30 minutes.
